I noticed one type of popular undead that is missing is the Mummy.

I imagine that the Mummies would be created from ancient civilizations when the royal funerary priests channeled the faith of their population into their dead Pharoahs during the embalming ritual and created their undying gods.

The personalities of the Mummies would be elitist and egotistical since they see themselves as gods. They would prefer to not lift a finger and have their undead servants do all the work.

The main resource obtained from humans are bones. They would cast the curse of decay on the corpse to expose the skeleton and then reanimate it as a skeletal servant.

In battle, they are physically weak in direct combat. They prefer to fight at a distance using various curses and their skeletal servants. They can increase the size of their skeletal legion by harvesting the skeletons from the corpses of their human victims. When their legion is large enough they can merge the skeletons into various constructs. For example, Bone Walls, Bone Giants, Bone Scorpions, Bone Catapults, etc.
